I've just found this amazing project and I'm still reading and learning.
I noticed the mention about 12bit sampling... so I'm wondering if it is possible to make it with a 16bit ADC like MCP33131-10 that I seem has same connectors and voltage range.
I assume it requires some changes in code, switching all 4095 occurrencies (and related factors) to 65535, but I don't know if there are any other implications.
