I am using a zero W because that's what I could find the fastest. Only had it working for a few days, and I'm definitely wanting to try a standard Pi zero. I don't know enough about Pi to know how to work it with out wifi though. Basically I could tell that when the Wifi is on, and I'm in VNC to run the programs, the latency and overall sound degrades. But if I don't have wifi on I don't know how I'd get in the to control it. Usb? But wifi seems like the most convenient way to control it with my phone at a gig.

The only difference is that the wireless operation takes some resources that degrade the sound quality, so it is convenient to disable the wifi networks while using effects:
With the old standard Pi Zero Board, disconnecting the wifi is simple by just unplugging the USB wireless dongle.
