Input with two adc's

Hello, Forum!

I'm doing some research on the topic of digital audio processing and related stuff and I'm interested in such method of using adc since using, for example 8 channel adc would leave with 4 lower resolution channels for potentiometers and two higher resolution for stereo audio.
Where can I find more info on the topic? Right now I only understand it has things to do with balanced audio, which I'm familiar with.
Will "diffirential mode" in this api be relevant for me?
